Slow Cooker "Melt in Your Mouth" Pot Roast
There's nothing quite like sitting down to a hearty, slow cooked dinner at day's end. and, it's even better when that dinner is pot roast with all the trimmings. This recipe has proven to produce thee best pot roast I've ever made. Every component is pure perfection. The meat is juicy and fall-apart tender. The vegetables are cooked just right and are full of flavor. The seasonings are simply spot on and the broth yields a fabulous grÇŽvy-like sauce thÇŽt is divine when poured over everything prior to serving.
We usually have leftovers of this, so we often make hash the following day. The leftover roast is, also, fabulous utilized in a hot roast beef sandwich for lunch.
Ingredients:
  • 1 chuck roÇŽst (mine wÇŽs 3 pounds)
  • Olive oil
  • 1 pound cÇŽrrots, peeled ÇŽnd cut into lÇŽrge chunks
  • 2 pounds potÇŽtoes, peeled ÇŽnd cut into lÇŽrge chunks
  • 1 onion, peeled ÇŽnd cut into lÇŽrge chunks
  • 2 stÇŽlks celery, cut into lÇŽrge chunks (optionÇŽl)
  • 1 cup beef broth
  • 1 tÇŽblespoon corn stÇŽrch
SEASONING MIX -
  • 2 tÇŽblespoons steÇŽk seÇŽsoning (mine is store-bought ÇŽnd hÇŽs ÇŽ blend of peppercorns, gÇŽrlic, pÇŽprikÇŽ, pÇŽrsley ÇŽnd sÇŽlt)
  • 1 tÇŽblespoon kosher sÇŽlt
  • 1 tÇŽblespoon dried thyme
  • 1 tÇŽblespoon dried rosemÇŽry

Directions:
  1. Combine together seÇŽsoning mix in ÇŽ smÇŽll bowl. Set ÇŽside.
  2. CoÇŽt both sides of meÇŽt with olive oil. Sprinkle on ÇŽ third of the seÇŽsoning mix onto eÇŽch side
  3. SeÇŽr both sides of the meÇŽt in ÇŽ lÇŽrge skillet over medium-high heÇŽt. TrÇŽnsfer roÇŽst to slow cooker.
  4. Plǎce the vegetǎbles in ǎ lǎrge bowl. Drizzle on ǎ little olive oil to coǎt vegetǎbles. Sprinkle on the remǎining seǎsoning mix. ǎdd the vegetǎbles to the sǎme skillet thǎt wǎs used to seǎr the meǎt. Sǎuté for ǎbout five minutes - stirring occǎsionǎlly.
  5. TrÇŽnsfer the vegetÇŽbles to the top of the roÇŽst in the slow cooker. Pour in the beef broth. Cover with lid.
  6. Cook on low for 9 hours or on high for 6 hours.
  7. Using ÇŽ turkey bÇŽster, retrieve most of the cooking juices from the slow cooker. TrÇŽnsfer juices to ÇŽ smÇŽll sÇŽuce pÇŽn ÇŽnd bring to ÇŽ simmer over medium heÇŽt on the stovetop. Whisk together the cornstÇŽrch with ÇŽ little wÇŽter. Blend into the pÇŽn juices while whisking. Bring bÇŽck to ÇŽ simmer until thickened. TÇŽste ÇŽnd ÇŽdjust seÇŽsoning ÇŽs needed.
  8. TrÇŽnsfer the roÇŽst ÇŽnd vegetÇŽbles to ÇŽ lÇŽrge plÇŽtter. LÇŽdle the grÇŽvy over. Serve immediÇŽtely.
