Shrimp and Cheddar Grits with Bacon

  • 4 cup water
  • 1 salt, to taste
  • 1 black pepper, to taste
  • 1 cup stone ground grits
  • 3 tbsp butter
  • 2 cup sharp cheddar cheese, shredded
  • 6 slice bacon, chopped
  • 1 lb shrimp, peeled and deveined
  • 4 tsp lemon juice
  • 2 tbsp parsley, chopped
  • 1 cup green onion, thinly sliced
  • 1 clove garlic, minced

  1. Bring water to a boil. Season with salt and black pepper. Add grits and cook until the water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheddar cheese.
  2. Fry bacon in a large skillet until browned. Transfer to a paper towel lined plate to drain. Add shrimp to the bacon grease and cook until the shrimp turn pink. Add lemon juice, parsley, green onion, and garlic and saute for 3 minutes.
  3. Spoon grits into a serving bowl. Top with shrimp, sprinkle with bacon, and serve immediately.
