EASY CHOCOLATE BANANA CAKE

INGREDIENTS:
  • 1/4 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 2 large eggs, slightly whisked
  • 1 cup flour
  • 1/2 cup cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup ripe bananas, smashed
CHOCOLATE CREAM CHEESE FROSTING
  • 2 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tablspoons heavy cream
  • 1 tablespoon cocoa
  • 2 cups powdered sugar
DIRECTIONS:
  1. Heat the oven to 350 degrees.
  2. Spray an 8×9″ baking dish.
  3. In a standing mixer, combine the butter, sugars, vanilla and eggs until smooth and creamy.
  4. In a separate bowl combine the flour, cocoa, baking soda and salt.
  5. Whisk well.
  6. Alternating between the dry ingredients and banana, add a little of each to the butter mixture, mix a little and then add a little banana, and back and forth until you’ve used everything up.
  7. Bake for 20-30 minutes or until a toothpick comes out clean. Ours was 26 minutes.
  8. Allow to cool a little while you make the frosting.
FROSTING
  1. In a bowl using a hand held mixer, combine the cream cheese, butter, heavy cream, cocoa and powdered sugar.
  2. Pour over the slightly warm cake and gently frost the top.
  3. Serve warm or room temperature.
